Vegan Cranberry Oatmeal Cookies

 

These cookies were inspired by my Grandmother’s oatmeal cookie recipie that was originally was a combination of oatmeal, flour, butter, and honey.  We use to nickname them “Grandmas Earth Cookies”, as they were not very sweet and quite dry.  Still we loved eating them because they were made with love by my Grandma Puleo.

 

Ingredients (12 cookies)

3 med bananas

1 cup cranberries

3 1/2 cups of whole rolled oats

1 tsp cinnamon

1 tsp of coriander

1/4 tsp clove

Preheat stove to 385 degrees. Mash bananas with a fork in a big enough bowl to eventually add all ingredients.  Add cranberries and mix in with mashed banana.  Add the remainder of the ingredients and mix until everything is combined.  By using a big spoon or hands, scoop mixture, pat to make a cookie, and place on a non-stick flat cookie pan.  Place cookies into the oven and bake for 20 minutes.  No wait time needed once baked…eat’em while they’re hot!
