Papas con Soyrizo

 

 

Growing up, one of my all time favorite meals use to be Papas con Chorizo, which means potatoes with chorizo – a spicy Spanish pork sausage. Since moving toward a more vegan diet, I thought for sure my days of enjoying papas con chorizo were over, but then I discovered soyrizo!  Soyrizo is a soy based imitation food product that is a substitute for chorizo and it is amazing!  I recommend this meal for breakfast along with tortillas and top it off with salsa or your favorite hot sauce.

 

Ingredients: (Serves 4)

2 large red yams cubed

1 cup diced yellow onion

1 whole red bell pepper diced

1 whole green bell pepper diced

6 ounces of soyrizo (El Burrito Organic & Non-GMO brand preferred)

Preheat oven to 425 degrees. Place cubed red yams in a large square cake pan and cover with foil, and place in oven for 30 minutes or until red yams are cooked, but not too soft.  Once cooked remove foil and broil at 500 degrees for 8 minutes.  While red yams broil begin to cook yellow onions, green bell pepper, and red bell pepper in a large frying pan for 2 minutes, then add six ounces of soyrizo and continue to cook in pan for 4 more minutes.  Once red yams have finished broiling and look a little crisp, add them to the frying pan and combine all ingredients together while cooking for another fifteen minutes.  Serve with tortillas or make a burrito, either way enjoy!
