Motivation Monday Salad

 

Weekends were made for splurging, which means lots of salty and sugary foods that our family would not normally eat.  By Monday I always feel as though we all need a good salad to detox and get us back on track.  Being a runner, and a Mama chasing after two small children I usually need more than just a mixed green salad to satisfy me.  I have found that adding beans to salad is much more filling and adds variety to an otherwise just plain mixed green salad.  For this salad I added Northern Beans because I love their buttery flavor!  I rarely use dressing, however for this one I used balsamic vinegar and included a dash of Italian seasoning – enjoy!

 

Ingredients (2 servings)

3 cups pre-washed organic mixed greens

2 cups of sliced cucumber

1 cup halved cherry tomatoes

1 (15 ounce) can of Northern Beans

Splash of balsamic vinegar according to preference

Dash of salt, pepper, and Italian seasoning

 

Combined all veggie ingredients and beans.  Splash balsamic vinegar or favorite preferred dressing.  Finish off with a dash of salt, pepper, and Italian seasoning.
