East Coast Cucumber Salad

I am always trying to find new salad side dishes, and upon visiting my Sister on the East Coast I came upon a cucumber salad that included tomatoes, and purple onion. I decided to throw in garbanzo beans for more bulk and of course protein. It came out amazing! Here is the recipe.

Ingredients (Serves 6)
1 English Cucumber Diced
2 Roma Tomatoes Diced
1/2 cup Purple Onion Diced
2 cans of Garbanzo Beans (drained & rinsed)
2 Lemons

In a large bowl, mix together diced cucumber, diced tomatoes, diced purple onion, and garbanzo beans. Squeeze the juice from the two lemons over mix and add salt & pepper. You can also add Italian Seasoning for a bonus of flavor!
